Well, it's week three of my Ideal You Weight Loss & Wellness Journey, and I am happy to report that I am down another 3.9 pounds which puts me at a total weight loss after 3 weeks of 15.3 pounds!  I am feeling great, and I am never hungry, in fact I sometimes have to make myself eat!

I love that I get to weigh in each week and visit with my coach.  Sheryl is very encouraging as well as knowlegeable.  Which is very helpful.  Each week I get a new recipe to try which also helps keep things interesting.  If you're like me, eating the same thing day after day gets really boring and can lead to staying from the diet.

That actually brings me to another point, this will be your LAST diet.  Because Ideal You is a lifestyle change rather than just a diet.  Yes, in the beginning you'll have to make some sacrifices, but in the end, you will have a new found way of eating that will help you maintain your weight loss for a lifetime!  I can't wait for that!  :D

Shrimp, Asparagus & Mushroom Stir fry
Serves 4

1 Tbsp. grape seed extract oil
1 c. sliced mushrooms
1 large bunch asparagus, trimmed and cut on diagonal into 1" pieces
1 pound large shrimp, peeled and de veined
sea salt
fresh ground pepper
2/3 c Walden Farms Asian Dressing
1/2 c. chopped fresh basil

1. Heat a large, nonstick pan over high heat. Add Grapeseed oil. Add the mushrooms and asparagus and stir fry until the vegetables are almost tender, about 6 minutes.

2. Season the shrimp with salt and pepper to taste. Add them to the pan and cook for about 3 minutes, stirring often. Add the Walden Farms Asian Dressing. When the shrimp are cooked through and the sauce is hot (after about 2 minutes), stir in the basil. Season with salt and pepper to taste. Enjoy!
