Casper’s Insanely Popular True Bakery Opening In New Location
It's been a work in progress for months, but finally the new location of Casper's True Bakery is opening September 9th.
November of 2022 was the last time that Bill Brockley Jr. made his sourdough pastries, bagels, donuts, croissants, sandwiches or did any catering out of a commercial kitchen in Casper. Since then he's been extremely busy occasionally baking from home, designing the new location and choosing a new location, writing a sourdough cookbook, adding new items to the menu and being recognized as one of the top bakeries in Casper.
"It has been amazing having been awarded with Casper's #3 Bakery for the second year in a row, alongside Wind City Sweets and Treats and Frosted Tops at #1 and #2, respectively, again. We have decided to expand our sandwich menu to include some fan favorites including a Reuben and Cubano sandwich. Winning #2 Sandwich Shop this year, we believe these beauties will attract more people through our doors. We make 95% of everything in-house, from our sandwich meats to the very condiments we use. We hope to continue to give the Casperites what they deserve."
It hasn't been an easy transition for Brockley Jr. and the bakery that began in Seattle, Washington back in 2019. The new location was originally to open in the spring/early summer, but Brockley Jr. says says there have been quite a few challenges.
Some challenges that have slowed down the progress of construction was simply trying to find people who were not already booked with projects. After the huge flooding that rolled through town, our house included, it was very hard finding a plumber to come and drill into the basement to hook up our sinks. However, once we were able to get that project scheduled, the rest of the buildout moved smoothly."
Thankfully, the wait to get your True Bakery fix is coming to an end. The new location in the Wolcott Galleria, 136 South Wolcott Street Suite 108 next to Toy Town, will be open beginning Saturday September 9th. The ceremonial ribbon cutting will happen at 10am with the Casper Area Chamber of Commerce.
Once the opening weekend is over, the hours will be Tuesday - Saturday 7am to 3pm, with a goal of opening 7-day-a-week in the near future.
It's an exciting time for True Bakery and the future looks bright for Brockley Jr. and his family.
The most exciting part for us on this journey is not only being able to operate fully in our own space, with no limits of what we can produce this go around, but also to welcome our new baby girl to the bakery world in the Winter of 2024. She will definitely be a chef just like her daddy
