Casper has become a craft beer hub in Wyoming, offering many great breweries to stop at and find your favorite beers. For the first few years at these breweries, beer was the only thing on the menu.

As food trucks became more popular, breweries were able to offer food to go with their beer, which became a game-changer. One of those breweries is Stahoo's Brewery and Taproom.

Jim and Heidi Gleason are approaching their 4th anniversary of opening the brewery. It's been fun to watch as it has expanded from just pouring beers at the brewery to adding a canned beer option, hosting special parties that offered food, and now adding their own food option to the mix.

The Stahoo's Gyro Bus begins its run as Casper's newest food truck option. The Gyro Bus will offer lovers of Greek food a chance to grab a Gyro and fries, or a Vegetarian Pita and fries, with a side of their tzatziki and pita.

Why Greek Food?

Good question. When Jim was in college, he lived in Detroit, MI, and worked at Niki's, an authentic Greek restaurant in Detroit's Greektown. He worked with the Kefallinos family for four years and fell in love with their traditions, food, and atmosphere.

Jim says his time there stuck with him:

One of the things that really resonated with me during my time there was the celebratory atmosphere around food and just serving. The restaurant was always fun, the food was great, and people came to have a good time. Not unlike my Polish ancestry. You get the European good food, people taking pride in it, and just celebrating.

Interestingly, the number of people I've talked with since Jim told me he was opening the food truck who say their favorite food is Greek food, but aside from a few places offering a Gyro on their menu, there's no option for authentic Greek items.

If you're one of those people, I think you'll be happy to know that, beginning June 4, 2026, there will be an option for authentic Greek food: the Stahoo's Gyro Bus at Stahoo's Brewery and Taproom in Casper.

They're slowly rolling out the bus, starting with a couple of traditional items, and as the summer goes on, they'll add more to the menu.

To start, Jim and Heidi will be open at the Brewery, 1015 East C Street, Casper, WY 82601, on Thursdays and Fridays beginning at 12 pm. They will also be scheduling special weekend events, including the 4th of July 250th Year Celebration at the Ford Wyoming Center.
